Sizzling BBQ Lion's Mane Mushroom Steaks

"Sizzling BBQ Lion's Mane Mushroom Steaks - Our Fantastically Vegan 'Meat' Recipe!" -Apothecary Sussex.

When we decided to transition away from meat, we were determined not to sacrifice flavour. We also didn't want to forgo the joy of searing steaks in a hot pan. There's something truly satisfying about it! This recipe, featuring lion's mane mushrooms, offers the same culinary delight as cooking meat while providing a rich and meaty taste experience. Lion's mane mushrooms are not only delicious but also considered a powerhouse of nutrition, known to enhance mental health and cognitive function. With their robust flavour and health benefits, lion's mane mushrooms have become a staple in our meals.


Mushroom Meat - How To Make Lions Mane Steaks Recripe

Ingredients:

- 3 large lion's mane mushrooms (approximately 1 lb/450 g in total)

- 2 tablespoons vegetable oil (refer to Notes)

- 2 tablespoons BBQ seasoning (your preferred brand)

- 1 tablespoon Sage & Onion seasoning

- Salt and pepper, to taste

- 3 tablespoons plant-based butter

- 4 tablespoons BBQ sauce (Your favourite brand!)

- Fresh herbs for garnish



Instructions:

1. Preheat the oven to 400ºF/200ºC (with convection) or 420ºF (without convection).

2. Trim the bottom of the mushrooms just enough so each one sits flat.

3. Heat a large, heavy ovenproof skillet, such as cast iron, over medium-high heat. Once hot, add enough oil to coat the bottom.

4. Place the mushrooms stem-side down in the skillet and cook for a minute or two to soften.

5. Add a second heavy skillet on top of the mushrooms and cook for another minute or so.

6. Fold up a kitchen towel or use tongs to gently press the centre of the top skillet to begin pressing the mushrooms. Apply firmer pressure as they release water. Wipe off any accumulated water on the top skillet and swirl in a little more oil for browning.

7. Continue pressing and browning the first side for 5 to 6 minutes until seared and browned.

8. Flip the mushrooms with tongs or a spatula, add a little more oil, and press firmly until seared and browned on the other side for another 5 minutes.

9. Mix together the BBQ seasoning and Sage & Onion seasoning. Sprinkle over the top side of the mushrooms along with salt and pepper.

10. Flip and cook for a minute or two, adding more oil if needed. Season the top side and flip again to cook until both sides are slightly charred and crispy.

11. Adjust the thickness of the steaks by applying pressure. Aim for approximately 3/4 inch/2 cm thickness.

12. Transfer the skillet to the oven and bake for 10 minutes.

13. Remove the steaks from the skillet and place it over medium heat. Add the butter, stirring and scraping to deglaze the pan.

14. Stir in the BBQ sauce until you have a medium-thick pan sauce.

15. Spoon some of the pan sauce onto plates, slice the steaks thinly, and arrange them over the sauce.

16. Garnish with fresh herbs and serve with a steak knife.



Notes:

- Lion's mane mushrooms vary in water content. If they are particularly watery, cook them longer to concentrate the texture and flavour.

- For searing oil, a combination of 3 parts rapeseed (canola) oil and 1 part olive oil works well for handling high heat and adding flavour.

- If Sage, Onion & Garlic Seasoning is unavailable, you can substitute it with 1 1/2 teaspoons onion powder and 1 1/2 teaspoons poultry seasoning.
